Toasted Pumpkin Seeds

I whipped these up in the kitchen today in no time at all. This could arguably be one of the easiest healthy snacks I know (that requires some prep). Added bonus: kids will eat them up with no clue how nutritious they are.

Basically, you take raw pumpkin seeds, add some oil and seasoning and bake. To maximize nutrition, you should soak the pumpkins seeds in warm water with 1-2 Tablespoons vinegar (I use raw apple cider vinegar) for 4-8 hours so the seeds begin their sprouting process. By doing this you are deactivating some of the enzyme inhibitors and essentially making it much more easy on the digestive system and the nutrients become more accessible to your digestive system. After soaking, rinse the seeds and place in a large bowl. Add some oil and some seasoning (see suggested combos below), stir to coat the seeds and transfer to a baking sheet so they are as spread out as possible. Bake at 325°F for about 15-20 minutes or until they start to turn golden brown. Cool and enjoy!

Suggested yummy combinations:

  • black tea (crushed into a coarse powder) + butter
  • curry powder + sea salt + coconut oil
  • sugar + cayenne pepper + sea salt + egg white
  • sea salt + coconut oil
